Marvellous Malteser Cupcakes


Sorry for my absence the past week; I was off sunning myself on holiday in Portugal. Now I'm back, I figured something nice to post would be a recipe. And, seeing as I've never actually done one of these before, it will be a nice way of introducing more of a lifestyle theme into my blog.
Recipe-wise I decided to opt for a chocolate cupcake because let's be frank here- who doesn't love either! I made these just the other week and my family and I had devoured them by the end of the day! So, if you're looking to make some irresistibly scrumptious cupcakes...keep reading. 

Ingredients for the cake:
110g butter 
100g self-raising flour, seived 
2 tsp cocoa powder
110g sugar (can be caster, soft brown or a mixture of both) 
1 tsp vanilla extract 
2 eggs
75g crushed maltesers 

Ingredients for butter icing: 
150g butter
200g icing sugar
Half tsp vanilla essence 
1 tbsp cocoa powder 
a drop of milk (if necessary) 
8-12 crushed maltesers for decoration

Method: 
Step 1: Preheat the oven to 180°C (350°F) and place about 20 cupcake cases on a tray. 

Step 2: Either in a bowl or food processor, combine the butter and sugar until light and fluffy. 

Step 3: Add the vanilla essence to the mix and stir well. Crack the eggs in a mug/bowl and whisk until combined. Gradually add the eggs to the mix, making sure to stir well after each addition to avoid curdling. 

Step 4: Fold in the flour and cocoa powder and mix until combined before stirring in the crushed maltesers. If you feel the mixture is lacking in maltesers, feel free to add as many as you desire! 

Step 4: Divide the mixture between the cupcake cases and pop them in the oven for 20-25 minutes or until a skewer comes out clean. Once cooked, place on a cooling rack to cool down. 

Step 5: Once the cakes are cool enough, you can begin making the icing to decorate them with. Start by mixing together the butter, icing sugar and vanilla essence until fully combined. Then add in the cocoa powder and stir until the mixture becomes light and fluffy. If the mixture is too solid to stir, simply add a splash of milk to loosen it slightly. 

Step 6: Start decorating the cupcakes with the butter icing. You can use either a piping bag or simply a teaspoon to smooth it down. Once the icing has been applied, crumble the crushed maltesers on top and enjoy!
